The writing of a "mentor" character is very particular. A good mentor should be a presence that drives the protagonist's growth without stealing their spotlight.
Addition: Rayleigh (ONE PIECE)! The master during the two-year training, although he doesn't appear often, he carries a lot of weight.
Biscuit from "Hunter x Hunter"! The trope of a master who looks cute but has terrifying strength is so interesting.
The best mentor in SRW is Dr. Saotome from "Getter Robo"! He might be a bit crazy, but he's incredibly hot-blooded.

As I've gotten older, I've actually come to better understand the feelings of the mentor characters. Jiraiya's sacrifice used to just make me sad, but now, it fills me with admiration.
Jiraiya is definitely number one! His influence on Naruto is so profound. I couldn't stop crying during that farewell battle.
